Vinaigrette

A really simple to make salad dressing which I prefer to any type I've ever bought in the shops. It's great on pretty much anything else too apart from salad, I use it often on cheese sandwiches. This amount is enough for about 10 salads.

Ingredients:
Olive oil
Malt vinegar
Wholegrain mustard
Salt
Pepper
An empty glass bottle (assuming you're making more than enough for just one meal)

Preparation:
1) A gravy boat or a small jug works best for mixing this. Start by putting in two big spoonfuls of mustard and add eight spoonfuls of the vinegar.
2) Add a little salt and pepper, stir well and leave for about 5 minutes.
3) Add the olive oil little by little, stirring well after each few spoonfuls of it.
4) The amount of olive oil just depends on how strong you want it to taste. I make it about 40:60 of the vinegar-mustard to oil and that leaves it with a good strong vinegar taste, just use more oil if you prefer a milder taste. And that's it ready.
5) If you're making more than enough for one meal, pour the rest into the empty glass bottle and store in the fridge, it keeps for a long time like that. Make sure to shake the bottle well before every use as the olive oil will rise to the top after a while.
