Bean and cheese burritos

Another great Mexican food I've been cooking a lot lately.

Ingredients:
2 flour tortillas
A can of refried beans
Grated cheddar cheese
1 tomato
A few slices of onion
1 clove of garlic
1 jalapeño pepper

Cooking:
1) To make the salsa topping, finely chop the tomato, onion, garlic and jalapeño, as in this recipe.

2) Heat the oven to about 200c, or alternatively these can be cooked faster in the George Foreman grill.

3) In the centre of each tortilla, spread a base of the refried beans, sprinkle the cheese on top and spread the salsa over it. Fold the tortilla into the centre from all four sides so that all of the filling is covered. (In the ones pictured I cut off the front after cooking for the photo just to show what was inside)

4) Put them on a baking tray in the centre of the oven for about 10 minutes and they should be ready. If you prefer the tortillas to be very soft on the outside you can wrap them in tin foil before putting in the baking tray as sometimes the outside gets a little crispy in the oven.

  2. The Foreman Grill has to be one of the best inventions ever :) It speeds up cooking so many things like that.
