Boxty

A traditional Irish dish. We made this at Christmas and I hadn't eaten it since I was very young. Other similar dishes like potato bread and potato farls are much more common here, but I much prefer these so I'll have to start making them more often. These amounts make about 8 servings.

Ingredients:
6 potatoes
130g flour
1/2 cup of milk
10g butter
25g melted butter
Salt
Pepper
Cooking oil


Cooking:
1) To start with you need to boil 3 of the potatoes, peel them and then mash them. Add the non-melted butter while mashing to make them thick and creamy.

2) With the other 3 uncooked spuds, peel them and then shred them.

3) Empty the shredded spuds into the centre of a kitchen towel, and, while holding it over the sink, squeeze them together so all the moisture in the spuds will drip out.

4) In a bowl, mix the mashed spuds, shredded spuds and the flour together. Add some salt and pepper.

5) When it's mixed together well, add the melted butter and the milk. Add the milk little by little until it comes to the right consistency. It should be a thick dough when it's right.

6) Next you can either roll out all of the mixture on a flat surface until it's about a 1/2 inch thick and cut it out into little circles, or the faster and easier way: lift spoonfuls of the mixture into your hand and mould it into half-inch thick circles by hand.

7) Cover them in foil and leave them in the fridge for several hours so they can set properly. Take them out 45 minutes before cooking.

8) Heat a frying pan to medium heat with some cooking oil on it, then fry the boxty for about 5 minutes, turn and fry for another 5 minutes and they should be ready.
